Elk Burger

Ingredients

  • 2 Pounds Ground Elk (or Venison if Unavailable)
  • ½ Pound Bacon Lardons
  • 1 Egg
  • 1 Tablespoon Breadcrumbs
  • 1 Tablespoon Minced Garlic
  • 1 Teaspoon Steak Sauce
  • ½ Teaspoon White Pepper
  • ½ Teaspoon Freshly Ground Black Pepper
  • 1 Teaspoon Ground Sea Salt
  • ¼ Stick Grated Butter

Method

  1. In a large bowl, add the bacon lardons to the ground elk meat. The bacon fat needs to be evenly distributed throughout the meat.
  2. Add the steak sauce, pepper, salt, breadcrumbs, and the grated butter. Mix it up.
  3. Add in the egg and mix again.
  4. Divide mix in to 8 equal sized balls and press down gently to shape into patties.
  5. Grill for 7 minutes per side or until cooked through.
